Have you ever heard of pickled lizards? They are thin slices of roasted or cooked lizard (piece of beef), interspersed with vinaigrette and a sauce based on olive oil and vinegar, preserved in a pickle! The pickled lizard recipe that we have prepared includes dedo-de-moça pepper and olives, to give the meat a spicier and more striking touch, if you prefer!

Ingredients for making pickled lizard:
1 kilogram of lizard (beef)
Salt and black pepper to taste)
spicy or smoked paprika (to taste)
VINEGAR:
3 tablespoons of olive oil
1 white onion (large)
½ yellow and/or red (small) peppers
3 ripe tomatoes
1 chili pepper (optional)
SAUCE:
⅓ cup of apple cider vinegar
½ cup of olive oil (approximately)
fine herbs (to taste)
Salt and black pepper to taste)
chopped green smell (to taste)
pitted green olives (to taste)
How to make pickled lizard:
Separate the ingredients for the preparation of this recipe for sliced pickled lizard meat, also called the holiday lizard.
Tip: For this recipe, it is important to remove excess fat from the lizard, facilitating the cut needed to prepare the dish.
Season the meat and let it sit for 1 hour to get more taste.
Tip: Preheat the oven to 200-220 degrees, 10 minutes before removing the meat from the rest.
Wrap meat in foil and bake for about 1 hour to 1 hour and 15 minutes in high oven (200-220 degrees).
When the meat is cooked, allow it to cool a little and wrap it in plastic wrap. Take the meat to the freezer for about 2 hours to make it easier to cut the slices we'll make next.
Tip: It is noteworthy that the meat after roasting reduces its weight.
The next step in the recipe will be to prepare the vinaigrette stew that we will use in the preserve. Separate all the suggested ingredients and cut the onions into slices, cut the tomatoes (seedless) and the pepper into cubes. Remove the seeds from the chili pepper and cut it into thin slices.
In a skillet heated over medium heat, add the olive oil and saute the onions until they are a little wilted. Then add the pepper and pepper, sauteing for a few minutes. Finally, add the tomatoes and saute a little more, without letting the vegetables burn.
Now let's prepare the pickled lizard sauce: for this, separate the requested ingredients (vinegar, oil, fine herbs, salt and pepper, green scent and olives.
Tip: You can substitute capers for olives if you want!
Mix all sauce ingredients in a bowl and set aside.
Remove the meat from the freezer and slice it as thin as possible.
Tip: If you prefer meat with thicker slices, you don't need to take it to the freezer. Just let it rest on the plastic film in the fridge for at least 1 hour.
Let's start assembling the pickled lizard: separate the prepared ingredients and start by placing the vinaigrette stew in the pot, then the slices of meat and a few tablespoons of sauce.
Repeat the layers until the ingredients are gone, leaving everything covered with the sauce. Refrigerate and let it brown for 24 hours (this will make the meat even tastier).
Tip: For this recipe we use a hermetically sealed pot with a capacity of 750 ml.
Store the pickled lizard in the refrigerator and only remove it when consuming. The important thing is to always leave the meat submerged in the olive oil sauce, as this will allow the meat to be preserved longer in the refrigerator.
